So many times I have seen - and done - the placing of battered fried food on paper towels to "drain".
NOOOOOOOOOOOOOOOOOOOO!
All this does is make the bottom of the fried food gummy.
Battered and fried food should be drained on a wire rack over paper towels.
Serves a greater purpose
