Omelet Recipe

This is just a fun thing for a Sunday Brunch.
Ingredients
eggs
butter
milk or water
plate of sliced cheese 1" x 4" x 1/4"
crumbled bacon or ham or baloney
mushrooms
chopped onion
chopped green pepper
cooked peas
chopped tomatoes (or fresh canned)
and anything else you can think of

Directions
Stir up a bunch of eggs with a little milk or water in a pitcher.
Set a flat electric griddle at 325° and lay a pat of butter 1/4 of the way down from each end.
Then pour a flat layer of eggs on each end of the griddle (they'll meet in the center and will make
2 omelets).
The fun comes from centering across each omelet, various items selected by each guest from bowls and plates on the table, as listed in Ingredients.
The trick is to remember what each guest selects long enough to toss it on the omelet.
I usually end up asking them several times.
Fold eggs over cheese, etc., and cook a little while. then turn over, cook some more and slide to end of griddle while you make two more.
This way you can serve 4 hot ones at a time.
For more guests, you have to put them on their plates and keep them warm in an oven (or eat in relays).
