Broccoli And Cheddar Soup With White Popcorn

Ingredients
1 T butter
1 T olive oil
1 white onion, chopped
1 leek, cleaned and chopped
1 carrot, peeled and chopped
2 cloves garlic, chopped
2 heads broccoli, cleaned and chopped
6 cups chicken stock
1 cup cream
2 cups shredded sharp cheddar cheese
Freshly popped white popcorn

Directions
In a large sauce pot, melt butter with the olive oil.
Add chopped onion, leek, carrot and garlic.
Sweat vegetables in pot 5 minutes.
Add chopped broccoli and chicken stock.
Cook 45 minutes over medium heat.
Reduce heat.
Add cream and shredded cheese.
Blend soup in small batches in blender until smooth.
Serve hot in bowls with a garnish of freshly popped white popcorn on top.
