Roasted Veal Shoulder With Bacon And Thyme

Ingredients
1 teaspoon, kosher salt
Freshly ground black, pepper, to taste
5 pound boned and rolled veal shoulder, very good quality
12 oz.. smoky bacon, cut into 6, 1-inch strips, any rind removed and reserved,
2 tbls. chopped fresh, thyme leaves

Directions
Place rack in center of oven.
Heat oven to 500° F.
Salt and pepper the veal.
Lay 3 bacon strips in the middle of a 12x8x2-inch roasting pan.
Sprinkle with 1 tablespoon of the thyme.
Place veal on top of bacon.
Sprinkle with remaining thyme.
Cover with 3 bacon strips.
Sprinkle any rind on top.
Roast for 30 minutes.
Reduce heat to 300° F.
Roast 60 minutes more.
Allow to cool slightly.
Best when thinly sliced.
