ITALIAN PISMO CLAM CHOWDER

The Recipe
1 1/2 c. potatoes, finely chopped 
1/4 c. bacon drippings 
1/2 c. carrots 
1/4 c. celery 
1/2 c. onions 
1/3 c. rice 
3 minced Pismo Clams 
Salt and pepper to taste 
2 cloves garlic 
1 Tbsp. parsley 
2 cans tomato sauce 
1 1/2 qts . water

Simmer diced potatoes in drippings slowly, 15 minutes.
Add salt. 
Chop carrots, celery, garlic and parsley fine.
Add to potatoes.
Simmer 1/2 hour.
Add water and tomato sauce.
Bring to boil.
Add rice and simmer 1/2 hour.
Add clams, salt and pepper to taste.
Bring to a boil and serve.
