Carrot Bread

Ingredients
1 cup shortening  1/2 cup brown sugar 
1 egg  1 cup grated carrot 
2 tsp. lemon juice  1/2 tsp. vanilla 
1 Tbsp. hot water   
   
1-1/4 cups flour  1 tsp. nutmeg 
1/2 tsp. baking soda  1 tsp. baking powder 
1/2 tsp. salt  1/2 tsp. cinnamon 


Directions
Cream together the shortening and sugar. 
Add the egg.
Add the grated carrot, lemon juice, vanilla, and hot water.
Mix well.
Sift together the dry ingredients.
Add to the wet mixture and mix well.
Bake in a one-quart greased ring mold or muffin pans at 350° for 30 minutes.
