Triple Chocolate Chip Cookies

Ingredients
1 stick (8 Tbsp.) unsalted butter  1-3/4 cups plain flour 
1 tsp baking powder  3/4 cup brown sugar 
1/4 cup sugar  1 tsp salt 
1 tsp vanilla paste  1 large egg 
4 oz. milk chocolate chunks  1.5 oz. white chocolate chunks 
1.5 oz. dark chocolate chunks  Coarse sea salt, to finish 


Directions
  1. Place the butter in a medium saucepan over a high heat.
  2. Once melted, stir constantly until the butter foams and turns a nutty brown color.
  3. Remove from the heat. 
  4. Mix the flour, baking powder, the sugars and a pinch of salt together in a large mixing bowl.
  5. Add the butter, vanilla and egg and combine.
  6. Fold in the chocolate chunks. 
  7. Roll the mixture into 3.5 oz. balls, transfer to a lined baking tray and freeze overnight. 
  8. The next day, preheat the oven to 350°.
  9. Transfer the tray to the oven and bake for 11 minutes.
  10. Remove from the oven, cool on a wire rack and sprinkle with a little coarse sea salt while still hot.
