Maryland Mushroom Pie

Ingredients
3 lbs. fresh mushrooms
1/4 lb. butter
2 large onions, chopped
2 T. flour
1 c. strong chicken broth
1/2 c. Madiera wine
celery salt
salt and pepper
cayenne
ED: The original recipe did not have a pastry crust in the ingredients. One can assume that you need a pie pan with a pastry crust on the bottom and another pastry crust to top it. This sounds pretty good.

Directions
Sauté onions, add mushrooms and sauté in butter until limp.
Remove to pie pan.
Brown flour in 2 T. of the butter, slowly add stock and wine.
Cook, stirring until thickened and smooth.
Season to taste.
Pour sauce over mushrooms and onions - cover with pastry crust.
Bake at 375° for 1/2 hour.
Superb with roast beef and a salad.
