Fromage Forte

Ingredients
8 oz. assorted leftover cheeses, rinds removed
2 Tbs. unsalted butter, softened
2 Tbs. minced fresh herbs such as oregano, thyme and rosemary
2 Tbs. hard cider or eau-de-vie (a clear, colorless fruit brandy)

Directions
For a delicious cheese spread, cut soft cheeses into 1" pieces.
Grate hard cheeses.
In a food processor, process cheeses with remaining ingredients until smooth, about 1 min.
Refrigerate airtight until ready to serve (stays fresh at least 7 days).
Serve with toasted baguette slices or crackers.
