Yield: 6 to 8 portions. 

1 quart milk 
2 cups yellow corn meal 
1 cup butter or margarine 
2 tsp. baking powder 
1 tsp. salt 
6 eggs, separated 

 

Heat milk in top of double boiler over hot water.
Add corn meal gradually, stirring constantly.
Cook, stirring until mixture becomes thick and mushy.
Remove from heat. 
Blend in butter. Let cool slightly.
Combine baking powder and salt.
Blend with corn meal mixture.
Beat egg yolks.
Stir small amount of corn meal mixture into yolks.
Combine with remaining mixture.
Beat egg whites until stiff.
Fold into corn meal mixture.
Pour into greased 3-qt. baking dish.
Set dish in a pan of hot water.
Bake at 325 degrees F for 60 to 70 min., or until firm.
