Chicken Tortilla Casserole

Ingredients
1 whole roaster chicken
Lots of garlic cloves
1 lemon
Seasoned salt, to taste
Pepper, to taste
1 cup water or clear chicken broth

Directions
Preheat oven to 350 degrees.
Wash the chicken inside and out, leaving it moist to allow seasoning to adhere to skin.
Crush half the garlic cloves (use more or fewer depending on how much you like garlic).
Slice the lemon.
Season the cavity of the chicken with seasoned salt and pepper.
Place the whole garlic cloves in the cavity of the chicken, along with the sliced lemon (skin and all).
Season the outer portion of the chicken with crushed garlic, seasoned salt and pepper.
Pour the one cup liquid in the bottom of the broiler pan.
Place the chicken breast-side down on a V-rack in the broiler pan uncovered.
Bake the chicken until the internal temperature reaches 165 degrees.
You can test the temperature by inserting a meat thermometer into the breast next to the wing.
When the chicken is done, remove it from the rack and pan and completely encase it in aluminum foil so that no steam can escape.
Let the chicken remain in foil for one hour, then remove and carve.
