Syrup:
3/4 c. sugar
3/4 c. hot (boiling) water

Pie Filling:
1 c. sugar
2 egg yolks, beaten
2 T. butter
4 T. flour
1 t. vanilla
2 c. milk

To Finish:
pastry shells
meringue

In a heavy skillet, burn 3/4 c. sugar until it is brown, almost black and it begins to smoke. Remove from heat. Add hot (boiling) water. Stir. This is the caramel syrup.
Mix pie filling ingredients well. Pour this into the skillet with the caramel syrup and cook until thick. Cool.
Pour into baked pastry shell and top with meringue.
