3 eggs, beaten
1 medium zucchini, sliced
1/2 can green beans
1/2 slice American cheese
1/2 slice cheddar cheese
fresh sliced tomatoes

Pour beaten egg into a pan heated to medium, swirling egg continuously until all the egg is cooked. Place the cheeses onto egg and top with zucchini and green beans. Fold egg in half and leave on heat for another minute or two, until cheese melts. Place on plate and garnish with sliced tomatoes.

Makes 1 serving.
