Mexican Lasagna, aka Enchiladas

Ingredients
Dressing:
2 sliced, peeled cloves garlic
2 t. salt
1/4 c. lemon juice
1/2 t. sugar (granulated)
1/2 t. pepper
1/4 t. celery seed
1 t. paprika
1 1/2 t. dry mustard
l0 T. salad oil


Salad:
2 medium heads lettuce
2 bunches watercress or 1 small bunch romaine
1 c. sliced, toasted, blanched almonds
1 1/2 c. very tiny raw cauliflower florets
1 peeled clove garlic
1 very ripe avocado, cut in pieces
2 sliced, peeled tomatoes

Directions
Prepare salad dressing in advance, pour into jar.
Shake well.
Chill.
Mix salad ingredients.
To vary: add bits of cheddar or Roquefort cheese, chopped hard cooked eggs.
Shake dressing well and pour over salad.
