Ingredients
2 jars marinated artichoke hearts
1 chopped onion
1 clove garlic, minced
1/2 lb sharp cheddar cheese, grated
4 eggs
1/4 cup dry bread crumbs
1/4 tsp oregano or basil
2 tsp parsley
1/4 tsp Tabasco sauce
Directions
- Drain 1 jar of artichokes and put marinade in frying pan.
- Sauté onion and garlic in marinade.
- Drain other jar and chop artichokes from both jars.
- Beat eggs.
- Add bread crumbs, artichokes, cheese, onion, garlic and spices.
- Mix together and place in a greased baking dish.
- Bake at 350° for about 30 min.
- Serve with tortilla chips, sliced fresh vegetables, or sliced French baguette.
