4 veal, lamb or pork chops 2 T. butter or oleo 1/3 c. sifted flour 2/3 c. milk 1 egg 1 small onion, grated 1/2 c. Parmesan cheese 1 t. salt 1/4 t. pepper
NOTE: Oleo is just margarine, which you should never use. Use the butter.
Directions
Preheat oven to 350°. Make the batter:
Melt butter or oleo.
Sift flour in smoothly.
Then add milk slowly.
Cook until thick.
Add slightly beaten egg and cook over a low heat, beating like fury.
When batter is thick, add onion, cheese, salt, & pepper. Stir until seasonings are mixed thoroughly.
Take off stove.
Brown chops quickly on one side only. Drain excess fat. Turn brown side of chops facing up. Sprinkle with salt and pepper. Place a tablespoon of batter on top of chops - let bottom side fry 5 minutes. Bake in oven 30 minutes (or use broiler pan in oven so excess fat will drain as they bake ).
