3 lbs. fresh mushrooms
1/4 lb. butter
2 large onions, chopped
2 T. flour
1 c. strong chicken broth
1/2 c. Madiera wine
celery salt
salt and pepper

Sauté onions, add mushrooms and sauté in butter until limp. Remove to pie pan. Brown flour in 2 T. of the butter, slowly add stock and wine. Cook, stirring until thickened and smooth. Season to taste. Pour sauce over mushrooms and onions - cover with pastry crust. Bake at 375° for 1/2 hour. This will serve 8 - 10. Superb with roast beef and a salad.
