Makes 9 large pancakes; 12 small

Comments
This is a modification from the Ultimate Pancake on the back of the Bisquck® box.

Ingredients
2 cups Bisquick®
1 cup buttermilk - I made mine with 1 cup milk and 1 TBSP apple cider vinegar
2 eggs plus one yolk
3 TBSP sugar
2 tsp baking powder
2 TBSP melted clarified butter - you can use regular melted butter or vegetable oil
2 tsp vanilla extract

Directions
Mix dry ingredients and wet ingredients separately, then combine.
Mix until dry ingredients are incorporated but still lumpy.
Allow mix to set for about 20 minutes.
Pour by the 1/4 cupful onto a hot greased skillet. (I think mine are a little bigger.)
Cook until edges are dry, then flip and cook until golden brown.
