Pie Filling: 1 c. sugar 2 egg yolks, beaten 2 T. butter 4 T. flour 1 t. vanilla 2 c. milk
To Finish: pre-made pastry shells meringue
Directions
Mix pie filling ingredients well. Set aside. In a heavy skillet, burn 3/4 c. sugar until it is brown, almost black and it begins to smoke. Remove from heat. Add hot (boiling) water. Stir. Pour pie filling into the skillet with the caramel syrup and cook until thick. Cool. Pour into baked pastry shell and top with meringue.
