Makes 6 or 7

Ingredients
½ cup flour
¼ teaspoon baking powder
½ cup seltzer (more might be needed)
1 cup corn  
Salt
Pepper
Oil

Directions
  1. Whisk together the flour and baking powder
  2. Whisk in the seltzer
  3. Sprinkle in some salt and pepper
  4. Add the corn, and mix (don’t use the whisk…stuck bits)
  5. Heat a large skillet over a medium heat. When it’s heated, add a skim coat of oil (1-2 tablespoons), and pour in ¼ cup amounts of batter
  6. When lots of airholes appear on the top, 2-3 minutes, flip them over, and cooked until the bottom is browned.
  7. Sprinkle with salt, and serve hot
