Stolen from Mary Monroe, my sister

2 jars marinated artichoke hearts
1 chopped onion
1 clove garlic, minced
1/2 lb sharp cheddar cheese, grated
4 eggs
1/4 c dry bread crumbs
1/4 tsp oregano or basil
2 tsp parsley
1/4 tsp Tabasco sauce

Drain 1 jar of artichokes and put marinade in frying pan. Sauté onion and garlic in marinade. Drain other jar and chop artichokes from both jars. Beat eggs. Add bread crumbs, artichokes, cheese, onion, garlic and spices. Mix together and place in a greased baking dish. Bake at 350° for about 30 min. Serve with tortilla chips, sliced fresh vegetables, or sliced French baguette.
