I like these better than any other pre-made pancake mixes I have tried. Recipe is on Bisquick box or you can get it here: http://www.bettycrocker.com/recipes/dishes/pancake-waffle-and-crepe-recipes/bisquick-pancake-recipes

2 cups Original Bisquick™ mix
3 tablespoons sugar
2 teaspoons baking powder
1 cup milk
2 tablespoons vegetable oil
2 eggs
1 teaspoon vanilla, if desired (I use 2 tsp)
2 tablespoons lemon juice, if desired

Brush griddle or skillet with vegetable oil, or spray with cooking spray. Heat griddle to 350°F, or heat skillet over medium-low heat.
In medium bowl, stir all ingredients with whisk or fork until blended. Mix can be a bit lumpy but should not have any dry clumps.
For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook about 30 seconds or until edges are dry. Turn; cook other side until golden brown.

Makes about 8 6" pancakes.
