Ingredients
6 Medium Zucchini
2 cloves of garlic
1 green onion finely chopped
1/2 small tomato- diced very small
10-12 Ritz crackers depending on moisture
Directions
Boil or steam whole zucchini's until done.
Cut in half lengthwise.
Remove insides and place in bowl.
Add green onion, minced garlic, diced tomato and crushed Ritz crackers.
Mix all ingredients together.
Re-stuff zucchini shells with mixture.
Place on baking sheet, top with piece of cheese.
Bake at 250° for 15-20 minutes or until cheese is melted.
