Seasoned ground beef and creamy refried beans get tucked into lightly oiled corn tortillas, topped with melty cheddar or pepper jack cheese, then baked until the shells turn irresistibly golden and crispy. The secret is brushing the tortillas with just enough cooking oil and giving them a quick warm-up in the oven before filling — this keeps them pliable for folding while guaranteeing that perfect shatter when you bite in. A flip halfway through baking ensures even crispiness on both sides. Ready in about 30 minutes from start to finish, these baked tacos are ideal for busy weeknight dinners, game day snacking, or feeding a hungry crowd. Ingredients
Taco Filling
1 lb ground beef
1 packet taco seasoning
1/2 cup refried beans
 
Tacos
8 corn tortillas

2 Tbsp cooking oil
1 1/2 cups shredded cheddar or pepper jack cheese
 
For Serving
Sour cream
Salsa
Guacamole

Directions
Prepare the Filling
In a medium skillet over medium-high heat, cook the ground beef until browned, breaking it up as it cooks.
Drain the grease.
Add the taco seasoning according to package directions and stir to combine.
Add the refried beans to the skillet and stir until everything is well combined.
Remove from heat and set aside.
 
Prepare the Tortillas
Preheat your oven to 425°F (220°C).
Place the corn tortillas on a large baking sheet and lightly brush both sides with oil.
You want just a light coating — too much oil will make the tortillas soggy.
Place the tortillas in the preheated oven for 3 minutes, just until they become flexible.
 
Assemble and Bake
Spoon the ground beef mixture onto one half of each tortilla.
Sprinkle generously with shredded cheese.
Fold the other half of the tortilla over to close.
Return the tacos to the oven and bake for 12 minutes.
Flip the tacos over and continue baking for an additional 10 minutes, until golden and crispy.
 
Serve
Remove from the oven and serve immediately with sour cream, salsa, guacamole, or your favorite taco toppings.

You can make the meat filling ahead of time and store it in the fridge, then just warm it up and assemble when you're ready to bake. Leftovers can be stored in an airtight container in the fridge for 2-3 days. Reheat in the oven or air fryer at 250°F (120°C) for 5-7 minutes to re-crisp the shells.
