Cool off with this vibrant, refreshing gazpacho that captures summer in every spoonful. This classic cold Spanish soup brings together the season's best tomatoes, crisp cucumber, sweet bell peppers, and aromatic herbs in a chilled bowl that's as healthy as it is delicious. Perfect for hot days when you don't want to turn on the stove, this no-cook wonder requires just a quick blend and a few hours of chilling to develop its signature bold flavors. The bright acidity from red wine vinegar and lemon juice balances beautifully with the natural sweetness of ripe tomatoes, while a hint of Tabasco adds just the right kick. Whether you prefer yours smooth and velvety or delightfully chunky, this gazpacho adapts to your taste. Serve it as an elegant starter for dinner parties, pack it for picnics, or enjoy a bowl as a light lunch paired with crusty bread. It's naturally vegetarian and easily made vegan by omitting the Worcestershire sauce. Make it a day ahead to let the flavors meld and intensify - it actually tastes better the next day! This versatile soup is not only incredibly flavorful but also loaded with vitamins, antioxidants, and fresh vegetable goodness. - Claude

Ingredients
6 ripe tomatoes (about 3 lbs), peeled and chopped (about 6 cups)
1 red onion, finely chopped
1 cucumber, peeled, seeded, chopped
1 red or green bell pepper, chopped
2 ribs celery, chopped
1 to 2 Tbsp chopped fresh parsley
2 Tbsp chopped fresh chives
1 clove garlic, minced

(continued in the next column ↗️)

2 cups tomato juice, or 1 (15 oz) can crushed tomatoes
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
1 Tbsp freshly squeezed lemon juice
1 tsp Worcestershire sauce (omit for vegan or vegetarian option)
2 tsp sugar, or more to taste
Kosher salt and freshly ground pepper to taste
6 or more drops Tabasco sauce to taste

Directions
Place all ingredients in a large bowl.
Use an immersion blender or blend in batches in a blender to desired smoothness.
You might want to keep the gazpacho somewhat chunky by only pulsing a few times in the blender.
Adjust the seasonings to taste with more salt, pepper, sugar, or Tabasco.
Place in a non-reactive container (tomatoes are acidic) to store.
Chill several hours or overnight to allow the flavors to blend.
