Ingredients
1 lg Butternut squash
2 tbsp. Olive oil or melted butter
Salt and pepper

Optional:
Fresh herbs
Brown sugar
Maple syrup
Cinnamon
Nutmeg
Cayenne

Directions
  • Preheat oven to 375°.
  • Using a large, sturdy knife, cut your butternut squash in half lengthwise.
  • Scoop out the seeds and stringy bits from each half.
  • Put the butternut squash cut-side up into a baking dish.
  • Brush with olive oil or melted butter.
  • Season with salt and pepper.
  • Add optional ingredients.
  • Roast in the oven for approximately 45 minutes, until soft and fork-tender.
  • Remove from oven.
  • Scoop flesh from the skin.
