Ingredients
Shortbread Cookies
1 qt. table fat (I think you can substitute butter)
1 t. salt
1 T. lemon peel
1 T. vanilla
3 cups confectioner's sugar  (some people prefer granulated sugar for shortbread)
2 qts. flour, sifted

Butter Cookies
Instead of confectioner's sugar, use: 2 lbs. (1 qt.) granulated sugar
Omit lemon peel and use 1 1/2 T vanilla or lemon extract
Add 2 t. baking soda to the flour

Directions
Preheat oven to 375° F.
Mix ingredients thoroughly.
Place on a cookie sheet using a #40 scoop, or your brain.
Flatten slightly.
Bake for 8 - 10 minutes.
Servings\Yield
Makes maybe 24 cookies.

💬 Uncle Dave says...
This appears to make a million cookies. This is weird, because the ingredients side of the recipe card says "Shortbread Cookies", but then when you go to the other side it starts out, "butter cookie: Use...", and modifies all of the ingredients.
