Indulge in moist, spiced Oatmeal Cake topped with a decadent coconut-pecan frosting that's briefly broiled for caramelized perfection! Ingredients
Cake
1 1/2 cups oatmeal
2 1/4 cups boiling water
3 eggs
3/4 cup butter
1 1/2 cups brown sugar
2 cups flour
1 1/2 cups white sugar
1 1/2 tsp. baking soda
3/4 tsp. salt

3/4 tsp. nutmeg
1 1/2 tsp. cinnamon
Topping
1/2 tsp. vanilla
1 cup coconut
1 cup brown sugar
4 Tbsp. cream
1 cup nuts
4 Tbsp. butter

Directions
Cake
Bring water and butter to a boil.
Add oatmeal and let stand for 10 minutes.
When oatmeal is cool, add beaten eggs and dry ingredients.
Pour into a 9 x 13 pan.
Bake at 350° for 35 - 40 minutes.

Topping
Combine ingredients and heat in pan.
Spread topping onto the top of the cake.

Finish The Cake
Put topping covered cake under broiler for about 30 seconds to lightly brown the topping.
DO NOT WALK AWAY!
