Whip up this classic homemade Eggnog for a silky, nostalgic treat without the preservatives of store-bought versions. This lighter recipe creates a delicate balance of rich egg yolks and fluffy whites, sweetened just enough to complement the optional sherry. The versatile base lets you customize with your choice of milk, half-and-half, or heavy cream depending on how indulgent you're feeling. A perfect small-batch option for intimate holiday gatherings.

Ingredients
2 eggs, separated
1 - 2 Tbsp. sugar
2 cups milk or half and half (you can also substitute part of this with heavy cream)
1/2 tsp. vanilla
nutmeg
2 - 3 Tbsp. sherry (optional; if you do this, increase the amount of sugar by a bit)

Directions
Beat the egg whites until stiff but not dry.
Beat the egg yolks.
Add sugar and milk to the egg yolks and beat until well blended.
(If you are using heavy cream, whip it separately and fold into the beaten egg whites.)
Add the vanilla to the beaten egg yolk mixture.
Fold in the egg whites.
Pour into cups and sprinkle with nutmeg.
If you add a little sherry, add a little more sugar as well.
