Serve up Southern tradition with these authentic Hush Puppies, golden-fried cornmeal fritters that perfectly complement fish fries and barbecues. These crispy, savory bites feature the perfect balance of cornmeal and flour, with minced onion adding just the right flavor complexity. Quick to prepare and even quicker to disappear, these unpretentious morsels bring casual charm to any meal with their rustic, homestyle appeal.

Ingredients
1/2 cup corn meal
1 egg, beaten
1/2 cup flour
1 medium onion, minced
1 tsp. baking powder
3/4 cup milk
1 tsp. salt
Shortening or oil for frying.
Directions
Mix dry ingredients.
Stir in onion, egg, and milk.
Mix to a smooth batter.
Drop by teaspoon into hot fat (365°) and cook until brown.
Drain on a wire rack and serve.
Servings\Yield
Makes about 12-16 hush puppies. Serves 4-6 people
