Try this alternate version of Southern Hush Puppies Again for an even simpler approach to the classic cornmeal fritter. Ingredients
1 cup corn meal
1 onion, minced
1 tsp. baking powder
1 egg, beaten
1/2 tsp. salt
1/4 cup milk

Directions
Mix dry ingredients together.
Add the egg and beat vigorously.
Stir in the milk.
Form into small patties, either round or finger-shaped.
Drop into deep, smoking fat in which fish has been fried.
Cook until they are a dark brown.
Drain and serve.
Servings\Yield
Makes about 24-30 hush puppies. Serves 8-10 people
