Brighten your bread basket with this Orange Brazil Nut Bread that balances citrus brightness with rich, tropical nut flavor. This quick bread features a tender crumb studded with coarsely chopped Brazil nuts, while orange marmalade provides both sweetness and citrus intensity. The unique addition of vinegar helps activate the leavening for a perfectly risen loaf. Excellent toasted for breakfast or served alongside afternoon tea.

Ingredients
2 cups sifted flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup coarsely chopped Brazil nuts
1 egg, slightly beaten
1 cup orange marmalade
1/2 cup evaporated milk
1 Tbsp. vinegar
1 Tbsp. melted butter

Directions
Sift dry ingredients into mixing bowl.
Add nuts.
Combine remaining ingredients and add to flour mixture.
Stir until well blended.
Place into a greased loaf pan.
Bake in a 350° oven for 45 minutes.
Remove from pan and allow to cool before serving.
Servings\Yield
