Ingredients
1-1/4 cups flour, not packed*
2 tsp. baking powder
2 tsp. baking soda
3 Tbsp. sugar
3 large eggs, well beaten
3/4 cup milk
2 Tbsp. honey
1 tsp. vanilla
2 Tbsp. butter, divided
*When measuring the flour, DON'T scoop the flour out with the measuring cup. Spoon the flour into the cup and then level it with a knife.
Directions
Mix dry ingredients well.
Add milk to well beaten eggs.
Add honey to milk mixture.
Add in vanilla.
Now add wet mix to dry mix.
Mix until it has a cake batter consistency.
If it is too thin, add a bit more flour.
Melt a "dab" of butter in a skillet set at medium.
Place 1/4 cup batter into skillet, and repeat with as many as will fit at one time.
Once edges are dry, the middle is puffed up, and the secondary bubbles are popping in the middle, flip the pancakes.
Just give them a minute or two before removing them from the skillet.
Add a little dab of butter every so often if you need to between batches.
Stack 'em and smack 'em!
