Celebrate harvest season with this vibrant Cranberry Loaf that balances tart berries with bright citrus notes. Fresh cranberries provide pops of color and flavor throughout this moist quick bread, while orange zest and juice add aromatic complexity. The addition of walnuts creates textural interest in every slice. Perfect with the suggested cottage cheese spread, this versatile loaf transitions easily from breakfast to teatime.

Ingredients
2 cups sifted all-purpose flour
1 cup granulated sugar
1-1/4 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
juice and grated rind of 1 medium orange

1-1/2 Tbsp. salad oil
Boiling water
1 egg, well beaten
1/2 cup chopped walnuts
1 1⁄2 cups snipped fresh cranberries
Cottage cheese for spreading on sliced bread.

Directions
Preheat oven to 350°.
Grease loaf pan.
In a large bowl, sift first 5 dry ingredients.
Mix orange juice and rind, oil, and enough boiling water to make 3/4 cup.
Add egg to the liquid mixture.
Add liquid to the flour mixture.
Stir just until flour is moistened.
Fold in walnuts and cranberries.
Spoon into greased loaf pan.
Allow to set for 20 minutes.
Bake 1 hour, or until done.
For easier slicing, let stand in covered container overnight.
Serve with cottage cheese spread on slices.
