Discover the convenience of this no-bake Ice Box Fruit Cake, perfect for warm weather entertaining. This chilled dessert combines marshmallows with an abundance of fruits and nuts - cherries, currants, raisins, dates, candied pineapple - all bound together with crushed graham crackers. A splash of optional brandy or rum adds sophisticated flavor depth. This make-ahead treat develops even better flavor when chilled overnight, making it ideal for advance preparation before gatherings.

Ingredients
1/4 cup butter
1/2 lb. marshmallows
1/2 cup maraschino cherries (save the juice)
1/2 cup currants
1/2 cup white raisins
1/2 cup chopped walnuts

1/2 cup chopped pecans
1/2 cup chopped dates
1-1/2 slices candied pineapple, cut in small pieces
1-1/2 Tbsp. juice from the cherries
1/2 lb. crushed fine graham crackers
brandy or rum (optional)

Directions
Melt butter and marshmallows. Original recipe said double boiler, but you could probably do this in the microwave.
In a large mixing bowl, combine the remaining ingredients.
Add the marshmallow mixture and mix by hand.
Press into a loaf pan lined with wax paper.
Refrigerate 24 hours before serving.
If desired, flavor with rum or brandy.

Makes a 2 1/2 pound loaf
