Channel the expertise of the legendary chef with these light, airy Corn Fritters. The secret to their exceptional texture lies in using seltzer water in the batter, creating delicate pockets throughout each fritter. Fresh corn kernels add sweet pops of flavor and pleasant texture variation. These golden-brown delights develop a perfectly crisp exterior while maintaining a tender interior - ideal as an elegant appetizer or casual snack that showcases corn at its finest.

Ingredients
½ cup flour
¼ teaspoon baking powder
½ cup seltzer (more might be needed)
1 cup corn  
Salt
Pepper
Oil

Directions
Whisk the flour and baking powder together in a bowl.
Pour in the seltzer and whisk until combined.
Sprinkle in some salt and pepper to taste.
Add the corn and mix it in with a spoon or spatula – don't use the whisk or you'll end up with corn stuck in it.
Heat a large skillet over medium heat. Once it's hot, add a skim coat of oil (about 1-2 tablespoons) to the pan.
Pour the batter into the pan in ¼ cup amounts.
When you see lots of little air holes appearing on the top of the fritters (about 2-3 minutes), flip them over and cook until the bottom is nicely browned.
Sprinkle with a little salt and serve hot.
