Ingredients
Hungry Jack Buttermilk Pancake Mix or your favorite pancake mix*
1/2 cup sour cream for each cup of mix
*amount determined by how many pancakes you make
Directions
In a bowl, stir together the sour cream with the dry ingredients until just barely combined. Don't overdo it.
Add all of your liquid ingredients, and mix until just combined. Again, don't over do it!
If your boxed mix requires eggs, add them last and mix until combined
Heat your pan over medium-high heat, and add a little butter or oil.
Drop batter by 1/4 cup servings onto the griddle.
Cook on the first side until bubbles start to form on the surface and then begin to pop, and edges are starting to brown.
Flip to the other side and cook for another minute.
Serve with whatever you usually serve pancakes with.

I adapted this from a
scratch made pancake recipe to work with boxed pancake mix. I used Hungry Jack Buttermilk Pancake Mix, but I think it will work with most others.
I found this made the pancakes a little lighter and fluffier.
