Blend: Insert the immersion blender into the container. Blend continuously, moving the blender up and down, until the cream thickens and then begins to separate into butter and buttermilk. This can take anywhere from 5-10 minutes, depending on the blender and the temperature of the cream.
Separate the butter and buttermilk: Pour off the buttermilk into another container or discard it.
Wash the butter: Add cold water to the container with the butter. Pulse the blender a few times to "wash" the butter, then pour off the water. Repeat this process several times with fresh cold water until the water runs clear. This removes remaining buttermilk, which can affect the butter's shelf life.
Drain and shape: Gather the butter into a ball. Press the butter in the fine-mesh sieve or cheesecloth to squeeze out any remaining liquid.
Store the butter: Shape the butter into a log or a block using parchment or wax paper, or place it in a butter dish. Store in the refrigerator.
