Sort through the beans and toss out any damaged ones or sneaky pebbles that made their way in.
Give the beans a good rinse under cold water and dump them into a large pot.
Add the neck bones, stock or bouillon cube, water, salt, and thyme, then bring it all to a boil, which takes about 12 to 15 minutes.
Cover the pot, turn the heat down to low, and let it gently boil for 1 hour.
While that's happening, get your vegetables ready.
After the neck bones and beans have cooked for their hour, toss in all the remaining ingredients except the parsley and Tabasco sauce, and bring it back to a boil.
Cover and let it simmer very gently for another hour.
If things are looking a bit dry and the beans need more liquid, add about 1/2 cup of water.
The beans should be tender and moist when done, with some liquid still in there.
Serve everything up in bowls and sprinkle with parsley and thyme if you're using them.
Have the Tabasco sauce ready for anyone who wants to add some kick.
NOTE: In the video I saw where he made it:
1) I do not remember him using any stock.
2) He put thyme and bay leaves in it.
3) Boiled for 1 1/4 hour.
4) He put the leek, onions, carrots and celery in for about 1/2 hour more.
5) During that time, he made a persillade with parsley and three cloves of garlic.
6) He also chopped a tomato during that time.
7) Right before removing from the pot, he add the persillade and the tomato.
8) There was no mention of Tabasco, but that sounds good
