These Featherweight Buttermilk Biscuits live up to their name with a delicately light, fluffy texture and rich buttery flavor. Quick to prepare and ready in just 12 minutes of baking time, these golden biscuits rise beautifully and make an ideal accompaniment to soups, stews, or simply enjoyed warm with honey or jam.

Ingredients
2 cups flour
1 T sugar
1 T cornstarch
2 tsp baking powder
ยฝ tsp baking powder
ยฝ tsp salt
ยผ cup chilled, unsalted butter, cut into ยฝ inch pieces
ยพ cups chilled buttermilk

Directions
Preheat oven to 450.
Sift first 6 ingredients into bowl.
Add butter and rub in with fingertips until mixture resembles coarse meal.
Add buttermilk and stir until dough forms.
Turn dough out onto floured surface, knead until smooth, about 8 turns.
Roll out dough to 1 inch thickness.
Cut out biscuits with 2 inch cutter.
Gather strips, roll out to 1 inch thickness and cut additional biscuits.
Transfer biscuits to large ungreased baking sheet.
Bake about 12 minutes.
Servings
Makes approximately 8-10 2-inch biscuits
