This classic Blackberry Pie features a flaky homemade crust and a sweet-tart filling bursting with juicy blackberries. The perfect balance of sugar and lemon juice enhances the natural flavor of the berries, while the golden, sugar-dusted top crust adds a delightful crunch. Ideal for summer gatherings or whenever fresh blackberries are abundant, this timeless dessert pairs wonderfully with a dollop of whipped cream for a memorable finish to any meal.

Ingredients
Crust:
2 cups unbleached flour
1 tsp salt
2/3 cup chilled solid vegetable shortening, cut into pieces
¼ cup (about) ice water
Filling:
1 cup plus 1 T sugar
¼ cup unbleached flour
4 ½ pint baskets blackberries (about 5 ¼ cups)
2 T fresh lemon juice
Whipped cream

Directions
Stir flour and salt together, add shortening and rub in until mixture resembles coarse meal.
Gradually add enough water to bind mixture together, using fork.
Divide in half and flatten into disks.
Wrap in plastic and refrigerate until cold, at least 1 hour.
Heat oven to 425.
Place rack in middle of oven.
Stir in 1 cup sugar and flour in bowl.
Blend.
Add berries and lemon juice and toss to combine.
Roll out dough on floured surface to 12 inches.
Spoon filling into lined pie plate.
Place top dough on.
Fold dough under and crimp edge.
Cut several slits in crust for steam to escape.
Sprinkle top crust with 1 T sugar.
Bake 15 minutes.
Reduce oven temperature to 350.
Bake about 45 minutes until crust is golden.
