Crispy and golden zucchini cakes made with fresh veggies, cheese, and a hint of spice. These easy-to-make patties are perfect as appetizers, snacks, or a light meal. Customize with your favorite additions like bacon, corn, or herbs for extra flavor!
No Jump Zone
Ingredients
2 cups grated zucchini
3 eggs
½ cup finely chopped onion (medium)
¾ cup finely chopped red or green bell pepper
½ cup grated cheese (cheddar, swiss or jack)
¼ cup fine bread crumbs
¼ cup panko bread crumbs*

¼ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon Tabasco sauce to taste (optional)
1 tablespoon olive oil
1 tablespoon butter

Directions
Mix all ingredients, except oil and butter in a bowl.
The mixture should be just firm enough to form into patties.
If it is too thick, add another egg.
If it is too thin, add more bread crumbs.
Heat oil and butter in a frying pan.
Form balls of the zucchini mixture about 2 inches in diameter then flatten into thin cakes.
Fry until browned on both sides.
You can add corn, bacon pieces, chopped ham, or other spices and herbs.
You can also add some flour if you prefer to make the cakes gooey.

Makes about 8–10 zucchini cakes
