Ingredients
2 loaves Syrian bread (or any crusty bread)
1 bunch chopped parsley
1 bunch chopped green onions
1 peeled cucumber, cut in small pieces
4 tomatoes, cut in small wedges
1 chopped green bell pepper
1 clove crushed garlic
Juice of 2 lemons
½ cup olive oil
2 tbsp chopped fresh mint or 2 tbsp dried
Salt and pepper to taste
Directions
Toast bread, break into small pieces.
Set aside.
Mix chopped vegetables and mint.
Add garlic, lemon juice, olive oil, salt and pepper.
Toss vegetable mixture with bread and serve immediately so bread is not soggy.
Servings\Yield
Serves 4-6 as a side dish
