Ingredients
1 ½ cups unbleached white flour
¾ cup flaxseed meal
¾ cup oat bran
1 cup brown sugar, packed
2 tsp baking soda
½ tsp salt
1 tsp baking powder
2 tsp cinnamon

1 ½ cups shredded carrots
2 apples, peeled and shredded (can substitute 1 cup applesauce)
½ cup raisins, dried cranberries, or Craisins (or combination)
1 cup chopped nuts (any kind)
¾ cup milk
2 eggs, beaten
1 tsp vanilla

Directions
Mix flour, meal, bran, sugar, baking soda, baking powder, salt and cinnamon in large bowl.
Stir in carrots, apples, raisins and nuts.
Combine milk, eggs and vanilla and add to dry mixture until moistened.
Do not over mix.
Fill medium greased muffin cups ¾ full.
Bake at 350°F (180°C) for 15 to 20 minutes.
