Ingredients
3 T olive oil
4 oz smoked ham, cut in ¼ inch pieces
1 cup diced onion
1 cup diced green bell peppers
4 garlic cloves, chopped
½ tsp dried thyme
2 28 oz cans chopped diced tomatoes in juice, drained
¾ cup dry Sherry
Directions
Heat 2 T oil over medium high heat.
Add ham; sauté until golden, about 8 minutes.
Transfer to small bowl.
Add 1 T oil to saucepan.
Add onions, peppers, garlic and thyme.
Reduce heat to medium low; cover; simmer about 10 minutes, stirring occasionally.
Add tomatoes and Sherry.
Bring to simmer.
Cover partially; simmer until mixture thickens slightly, stirring occasionally about 20 minutes.
Stir in ham.
(The sauce can be made 1 day ahead.
Cover.
Chill.
Bring sauce to simmer to serve)
