Ingredients
4 oz cream cheese (half a standard 8 oz block), softened
5 oz goat cheese (about half of the Costco log), softened
1–2 tsp red wine vinegar (to taste)
1 tbsp finely minced shallot
1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
Salt and freshly ground black pepper to taste

Directions
In a medium bowl, combine the cream cheese and goat cheese.
Use a fork or hand mixer to blend until smooth and fluffy.
Stir in the red wine vinegar and minced shallot.
Mix well.
Add thyme, salt, and pepper.
Taste and adjust seasoning or vinegar as needed.
Transfer to a serving dish.
Cover and refrigerate for at least 30 minutes to allow flavors to blend.
Serve chilled or at room temperature with crackers, crostini, or fresh veggies.
