Add about two tablespoons of oil to a skillet and set on medium high.
Crack the egg into a bowl.
Grate the potato and squeeze as much water as possible out of it using your hands or a cheesecloth.
Add the scallions, potato, onion, flour, baking powder, and salt and pepper to the bowl.
Mix well.
Use a 1/4 measuring cup to add mixture to hot oil, and spread it out flat.
Let fry on one side for a couple of minutes, until golden brown.
Flip and let them cook on the other side for another two minutes.
You might want to keep them on a wire rack - never paper towels - in a warm oven until they are all ready.
Serve with a salad for a luncheon, or even as a side with any meal.
