Ingredients
2 cups (4 sticks) butter, softened
1 cup granulated sugar
1/3 cup confectioners' sugar
1 tablespoon grated lemon peel
2 teaspoons lemon extract
2 cups all-purpose flour
3 cups rolled oats
1/2 cup chopped candied cherries
Directions
In a large bowl, beat the butter and granulated sugar until creamy.
Add the remaining ingredients except the confectioners' sugar; mix well.
Cover and chill for 30 minutes.
Preheat the oven to 350°F (180°C).
Shape the dough into 1-inch balls and place on ungreased cookie sheets.
Flatten with the bottom of a glass repeatedly dipped in confectioners' sugar.
Bake for 12 to 15 minutes or until the edges are golden.
Cool for 1 minute on the cookie sheets, then remove to a wire rack to cool completely.
Sprinkle with additional confectioners' sugar, if desired.
