Preheat your oven to 350°F (180°C).
Line a baking sheet with parchment paper or foil and lightly grease it with cooking spray.
In a large bowl, whisk the egg until broken up.
Add the salt, pepper, and cracker crumbs.
Let the mixture sit for about 5 minutes to allow the cracker crumbs to absorb some moisture.
Add the ground beef, onion salt, and garlic salt to the bowl.
Use your hands to gently mix everything together, being careful not to overmix as this can make the meatballs tough.
Form the mixture into balls about 1½ inches in diameter (about 2 tablespoons each).
If your hands are sticking, you can lightly oil them to make rolling easier.
Place the meatballs on your prepared baking sheet, arranging them so they're not touching.
Bake in the preheated oven for 15-20 minutes, or until the meatballs are browned and cooked through to an internal temperature of 160°F (71°C).

💬 Uncle Dave says...
These meatballs are versatile! You can serve them with marinara sauce over pasta, use them in meatball subs, or enjoy them as appetizers.
They can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for longer storage.
If you want juicier meatballs, you can use ground beef with a higher fat content (like 80/20 ground chuck).
