Elevate any salad with this classic Mustard Vinaigrette from legendary chef Jacques Pépin. This versatile dressing combines the sharp tang of tarragon vinegar with the robust flavor of Dijon mustard, creating a perfectly balanced accompaniment to fresh greens. The beauty lies in its simplicity—made and stored in the same jar, it's ready whenever you need it and keeps for up to two weeks in the refrigerator. Customize with fresh crushed garlic for variation, or experiment with different vinegars to suit your taste preferences. - Claude

½ teaspoon salt
½ teaspoon freshly ground black pepper

Place all the ingredients in a 12-ounce glass jar, cover tightly, and shake well to mix.

💬 Uncle Dave says...
This dressing is not emulsified, because the oil is added along with the other ingredients, not whisked in at the end. This means the salad greens will be glossy and flavorful without being heavily coated. You might want to try different flavored vinegars for variety, or add fresh crushed garlic to the salad (not to the stored dressing) for an extra flavor dimension. The dressing will keep for up to 2 weeks in the refrigerator.
